In November 2012, Midway completed a 267,000 square foot state-of-the art, allergy-free dessert manufacturing facility in Fort Bend County. The $27M project, located on a 22.3-acre parcel at Beltway Crossing Business Park in Missouri City, was developed on behalf of The Carson Companies. In order to manufacture its cakes and cookies to the highest health safety standards, Midway worked with Carson Companies to specially design the new Twin Star Bakery facility.

The development includes office space, warehouse space and two types of manufacturing facilities — one manufacturing space allows nuts, and one does not, to ensure that products with nuts would not contaminate its product offerings without nuts. In addition to the unique aspect of the two manufacturing arms of the Twin Star Bakery facility, the team also designed an 80,000-square-foot, -10 degree freezer.

The facility also has a 200,000-square-foot lay-in ceiling over the production area, a specialized interior glass and insulated pipe protection to further prevent food contamination.
